1-1/2 oz. of semolina
1 pint of milk
1 oz. of loaf sugar
yolk of 1 egg
a few drops of essence of lemon
Soak semolina in 1/4 pint of the milk for 10 minutes, then stir it into the remainder of the milk, which must be boiling; add sugar, and stir over a clear fire for 20 minutes. Take off and mix in quickly the yolk of an egg beaten up with flavouring. Pour into mould previously dipped in water. Serve cold with stewed fruit or custard.
